- 1 cup shelled edamame, cooked
- 2/3 cup fresh basil
- 1/4 cup olive oil
- 1 teaspoon lemon zest
- 3 tablespoons lemon juice
- 1/4 teaspoon salt
- Puree the edamame, basil, olive oil, lemon zest, lemon juice and salt until smooth. Makes one cup.
- Serve with vegetables, bread or pita chips.
