Glass Noodle Soup
แกงจืด Gaeng Jued
Glass Noodle soup (Gaeng Jued) is typically not found in Thai restaurants. It is a clear light soup with pork meatballs. My mother would make me this soup whenever I had a cold.
Recipe Ingredients:
- 1 pound ground pork
- 4 garlic cloves
- 1/2 teaspoon white pepper
- 1/4 cup of chopped cilantro
- 2 tablespoons soy sauce
- 5 cups chicken broth
- 2 bundles of glass noodles (totaling 4 ounces)
- 1 cucumber, sliced into 1/4 inch pieces
- 1/4 cup fish sauce
- 1/4 cup of chopped scallions
- 1/4 cup of chopped cilantro
Recipe Steps:
- To make the meatballs, combine pork, garlic, white pepper, cilantro roots and soy sauce in a medium bowl. Thoroughly mix together the ingredients. Shape the pork mixture into 1-inch balls (makes about 12-14 meatballs)
- Bring the chicken stock to a boil in a very large pot over high heat. Once the broth is boiling, drop in the meatballs one by one. Cook the meat balls for 10 minutes until just about cooked through.
- Reduce the soup to medium high heat. Add the noodles and cucumber slices. Cook for 5 minutes until the noodles become translucent.
- Turn off the heat. Stir in the fish sauce, scallions and cilantro.
- Serve. Enjoy!
