Glass Noodle soup (Gaeng Jued) is typically not found in Thai restaurants. It is a clear light soup with pork meatballs. My mother would make me this soup whenever I had a cold.

Recipe Ingredients:

  • 1 pound ground pork
  • 4 garlic cloves
  • 1/2 teaspoon white pepper
  • 1/4 cup of chopped cilantro
  • 2 tablespoons soy sauce
  • 5 cups chicken broth
  • 2 bundles of glass noodles (totaling 4 ounces)
  • 1 cucumber, sliced into 1/4 inch pieces
  • 1/4 cup fish sauce
  • 1/4 cup of chopped scallions
  • 1/4 cup of chopped cilantro

Recipe Steps:

  • To make the meatballs, combine pork, garlic, white pepper, cilantro roots and soy sauce in a medium bowl. Thoroughly mix together the ingredients. Shape the pork mixture into 1-inch balls (makes about 12-14 meatballs)
  • Bring the chicken stock to a boil in a very large pot over high heat. Once the broth is boiling, drop in the meatballs one by one. Cook the meat balls for 10 minutes until just about cooked through.
  • Reduce the soup to medium high heat. Add the noodles and cucumber slices. Cook for 5 minutes until the noodles become translucent.
  • Turn off the heat. Stir in the fish sauce, scallions and cilantro.
  • Serve. Enjoy!

I hestitated about trying this one b/c of warm cucumber (yucky...well, maybe i should try before i say yucky) i used snowpeas instead to give it a little crunch. the meatballs were awesome. the cilantro really came through meatballs ... in fact, these meatballs are going to be addictive. there's a similar recipe with curry instead that i'm going to try. i didn't put the noodles in b/c i didn't think they'd heat up well through the week.
