Massaman Curry Paste

Massaman curry paste is one of the most mild Thai curries that exist today. It highlights the influences of Islamic cooking.
Recipe Ingredients:
- 20 dried red chilies
- 1 tablespoon ground coriander seed
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground star anise
- 1 teaspoon ground cardamom
- 1 teaspoon ground white pepper
- 4 tablespoons chopped shallots
- 1 tablespoons kaffir lime leaf, minced
- 1 tablespoons shrimp paste
- 4 to 6 tablespoon chopped garlic
- 2 teaspoons fish sauce
- ½ cube galangal root, chopped
- 2 2-inch pieces of lemon grass, sliced thinly
Recipe Steps:
- Using a mortar and pestle, pound the ingredients until it forms into a smooth massaman curry paste. If you are using a food processor or blender, you may need to add 2 tablespoons of water.
Serving Size: 1 1/4 cup
