Massaman curry paste is one of the most mild Thai curries that exist today. It highlights the influences of Islamic cooking.

Recipe Ingredients:

  • 20 dried red chilies
  • 1 tablespoon ground coriander seed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground star anise
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground white pepper
  • 4 tablespoons chopped shallots
  • 1 tablespoons kaffir lime leaf, minced
  • 1 tablespoons shrimp paste
  • 4 to 6 tablespoon chopped garlic
  • 2 teaspoons fish sauce
  • ½ cube galangal root, chopped
  • 2 2-inch pieces of lemon grass, sliced thinly

Recipe Steps:

  • Using a mortar and pestle, pound the ingredients until it forms into a smooth massaman curry paste. If you are using a food processor or blender, you may need to add 2 tablespoons of water.
