Thai Scallion Tomato Omelette

This Thai Scallion Tomato Omelette recipe is one of the best omelette dishes that my father taught me. It's quick and easy, but tastes like comfort food.
Recipe Ingredients:
- 4 eggs
- 1 tablespoon fish sauce
- 3 scallions thinly sliced
- Half red tomato sliced
- 2 tablespoons vegetable oil
Recipe Steps:
- In a small bowl, beat together eggs fish sauce scallions and tomatoes.
- In a large skillet, heat oil over high heat. Cook for 1 or 2 minutes until lightly brown; flip the omelet to the other side.
- Transfer to a serving plate ans serve with rice.
